Cafe Rio Barbacoa Pork

5-6 lb Pork Roast
20 oz Dr. Pepper
1 C Brown Sugar
3/4 C Sugar
1 Garlic Clove
7oz Chipolte Chillies in Adobe Sauce
6ish OZ Taco Sauce
1 tsp Dry Mustard
1 tsp Cumin
1/4 tsp Cayenne Pepper

Cover roast with water and cook for 6 to 8 hours. Drain the water.

Mix the above ingredients, It says to stir just until the sugar mixes in, I used hot taco sauce and poured in the soda at the end. Also, they recommended to pipe the soda into the can of Chilies to rinse out the excess juice. Pour this ove the roast, and cook for about 4 more hours at least. 3 shreded the meat before I poured the sauce on.

I noticed that when I let it sit over night, it took on the spices much more, and it definitely cleared my sinuses!

Taco Soup

This is one of my favorite super easy recipes, that always tastes amazing! I got this from a roommate I had when I first moved down here to Utah. Im not a huge fan or soup, but i love this because it is not really like soup, its more of a tasty dip!

1 Pound Hamburger Meat
2 Cans Diced Tomatoes
2 Cans Whole Kernal Corn (I prefer no salt added, and drained)
4 Cans Black or Pinto Beans
1 Packet of Taco Seasoning
Cheese
Sour Cream
Tortilla Chips

Brown the meat in a large pot. Stir in the Tomatoes, Corn, Beans, and Seasoning. Let this cook on low for as long as you want, I love putting this together in my crock pot so after a long day at church or work, you have a nicely seasoned soup! When you are ready to serve, sprinkle the cheese and sour cream on top, I like to use the chips as the spoon!

Easy Chicken in the Crock Pot

I had a friend recently share how much she hates her Crock Pot. I on the otherhand am an advid supporter and user of mine! One of my favorite recipes, my aunt threw together and now I make it all the time! Its super easy!

1 large can of Cream of Chicken Soup
Chicken Breast (as many as you want, I like tenders though!)
1 pkg. Onion Soup Mix

place the chicken in the crock pot, the soup and then sprinkle the soup mix on top and let it cook all day! This serves great with rice and corn, or whatever veggies you want!

Fresh Apple Cake

This is my favorite cake in the summers, it has such a wonderful texture and flavor! I used to make this in Vegas as well!


1¼ to 1½ cup Salad Oil

2½ cup flour

2 cups sugar

1 tsp. soda

2 eggs

2 tsp. baking powder

1 tsp. vanilla

1 tsp. salt

3 cups sliced raw apples

1 tsp. cinnamon

1 cup chopped pecans

½ tsp nutmeg

Stir all ingredients together and pour into a 13x9 inch pan. Bake at 350º for 55 to 60 minutes.

Applesauce Cake

Applesauce can be subbed when a recipe calls for oil. This will help cut out some of the fat and make it a little less sinful!


1½ cups raisins

¾ tsp. nutmeg

½ cup shortening

¾ cup nuts, chopped

1½ cup brown sugar

1½ T. cinnamon

3 eggs

¾ tsp. cloves

1½ cup applesauce (1 can)

3 cups flour

1½ tsp. baking soda

¾ tsp. salt


Cover raisins with boiling water and set aside so raisins can plump. Cream sugar and shortening. Add eggs and beat. Add applesauce and mix well. Add dry ingredients and stir well. Stir in raisins and nuts. Bake at 325º for 45 minutes, until done.

One Pan Cake

This is a childhood favorite, with little cleanup since you mix everything in the pan and bake!


Mix in 13x9 inch pan in this order:

2/3 cup oil

2 cups sugar

2 T, Cocoa

2½ cup flour

2 eggs, beaten

1 tsp. soda

1½ cup water

1 tsp. vanilla

1 tsp. salt

Sprinkle batter with 1 pkg. chocolate chips and 1 cup chopped nuts.
Bake at 350º for 36 minutes.

Baked Sweet Potato Fries

The one thing I miss about fall is Burgerville's Sweet Potato Fries. They where always a holiday treat and this recipe is great at giving the taste you need, but without all the greese and fat!

2 medium sweet potatoes, peeled

2 Tablespoons good olive oil

1 Tablespoon light brown sugar

½ teaspoon kosher salt, plus extra for sprinkling

½ teaspoon freshly ground black pepper

Preheat oven to 450 degrees.

Halve the sweet potatoes lengthwise and cut each half into 3 long spears. Place then on a sheet pan and toss with the olive oil. Spread the potatoes in one layer. Combine the brown sugar, salt, and pepper and sprinkle on the potatoes. Bake 15 minutes and then turn with a spatula.

Bake for another 5 to 10 minutes, until lightly browned. Sprinkle lightly with salt and serve hot. Servers 4.
